DAY 1
Breakfast: Carrot "lox" and cashew cream cheese on a gf bagel topped with fresh dill and crispy capers
Lunch: Buddha Bowl - Roasted seasonal veggies, quinoa, miso tahini kale topped with pickled shallots and smoky pepitas
Dinner: Lentil bolognese over spaghetti squash and roasted broccoli with an almond truffle parmesan
DAY 2
Breakfast: Coconut chia pudding topped with fresh fruit and house-made gluten free granola
Lunch: Summer Bowl - Kelp noodles, cucumber, carrot, shredded cabbage, red pepper and kimchi over fresh greens with a date vinaigrette
Dinner: RHK Shepherd's Pie - A lentil and veggie plant-based version of the classic with sweet potato
DAY 3
Breakfast: Gluten Free Protein Packed Overnight Oats with Fruit Compote
Lunch: Rainbow Quinoa Bowl - Quinoa, purple cabbage, carrots, red pepper, edamame and cashews with a miso vinaigrette
Dinner: No Beef & Broccoli - A take-out copycat version with oyster mushrooms and cauliflower rice
